My new favorite combination is lemon and blueberries!! I re-located the beauty and balance of this combination after I made the Blueberry Lemon Cream Cheese Danish and were dreaming about all of it day and night like someone in love! yes, i am in love! With lemons and blueberries! And of direction, spring! And flowers and sunshine and walk in the sun with lil V and the whole thing spring! it is just so proper out here, (except for the closing days or so) that all I want to do is be outside. Who cares if chores at home are piling up. i’m happy my “boss” aka lil V desires to be out all the time and it’s far the perfect season for that! This just have become is the best task ever!

I’ve been trying to make a few spring brunch recipes and what better than a blueberry lemon pancake. I used Bob’s purple Mill’s Buttermilk Wholegrain Pancake mix as that is what I usually use to make pancakes and they simply come out so well. I also made some blueberry lemon sauce with the leftover blueberries in place of the ordinary syrup.i used to be afraid that there has been going to be too much blueberries and lemon but i have to say, there may be no such thing as too much blueberries and lemon.

Blueberry Lemon Buttermilk Pancakes – The Recipe

Ingredients:

For the pancakes:

  • 2 cups Bob’s red Mill’s Buttermilk whole Grain Pancake mix
  • 2 cups complete milk
  • 2 eggs
  • 1/four tsp salt
  • Three tbsp sugar
  • Juice of half lemon
  • Zest of 1 lemon
  • Half cup blueberries
  • Half tsp baking soda
  • 1 tsp vanilla extract
  • 1 tbsp oil or butter
  • To cook: 1 tbsp butter (optionally available)

For the Blueberry Lemon Sauce:

  • 1/2 cup blueberries
  • juice of half of lemon
  • 1/four cup sugar (you can use more if needed)
  • 1 tsp vanilla extract
  • 1/four cup water

Method:

Mix all the elements for the pancake, one by one until well incorporated.
heat a griddle on low-medium heat. put a dab of butter in the pan and pour a ladle full (roughly around 1/4 cup or so) of pancake batter onto the griddle.
once the floor starts to bubble and the bubbles break, turn the pancake over to the alternative side.
allow cook for half of a minute or so.
do away with pancake from the griddle and repeat with the last batter.

To make the sauce:

In a sauce pan, upload the water. crush the blueberries kind of with the aid of hand and add to the sauce pan. add the last substances. cook dinner on medium heat for a couple of minutes, till the sauce starts to bubble. transfer off heat and keep the sauce aside.
Serve the sauce with the pancakes!
