INGREDIENTS FOR CUPCAKES:

  • Sugar – 1/2 cup
  • Water – 1/2 cup
  • Strawberries – 2 cups frozen or recent
  • Vanilla – 1/2 tsp
  • Corn starch – 2 tsp
  • Water – 2 tsp

METHOD FOR FILLING:

In a medium pot, mix sugar, 1/2 cup water, strawberries and vanilla. Deliver to a simmer and prepare dinner 3-Four minutes, till straberries begin to soften.
Mix corn starch and water in a small bowl and slowly add to the strawberries, stirring continually.
Take away from warmth and put aside to chill.

INGREDIENTS FOR STRAWBERRY FROSTING

  • Icing sugar – Three cups
  • Unsalted butter – 225 gm(softened)
  • Vanilla – 2 tsp
  • Heavy cream – 2 tbsp
  • Strawberries puree – 1/Four cup

METHOD FOR STRAWBERRY FROSTING

  • Beat butter and sugar with an electrical mixer till easy and fluffy.
  • Add vanilla and 1 tbsp of cream. If frosting is just too thick, beat in one other tbsp till icing reaches desired consistency.
  • Stir in strawberries puree.
  • Frost utterly cooled strawberry cupcakes with strawberry icing.
